These little treats are so delicious I have to stop myself not eating all of them at once. I have a two at the time limit! They are on the right side of sweet, not too sweet, with the sea salt taking them to an other level. The batch I made yesterday is nearly finished so I need to make an other batch (or two) before my mother arrives next week. She loves these!
They are easy to make, just a little fiddly to cover in chocolate. Do the toothpick trick I describe below as this will make the process easier. I used a milk free good quality chocolate so the treats are suitable for vegans.

Makes: 20-22 balls
Salted Almond and Chocolate Treats
150 g whole almond
100 g dessicated coconut, unsweetened
2 tbsp maple syrup
1 tsp vanilla bean paste or 1 vanilla pod
good pinch of flaked sea salt, plus extra for decorating
2 tbsp water
150 g dark chocolate, I used 74% cocoa
Combine the almond, coconut, maple syrup, vanilla paste, salt and water in a high powered food processor and blitz for 5 minutes.
Melt the chocolate. I used a small saucepan filled with boiling water, so I could place a small but deep bowl on top. This will make it easier when you dip and cover the balls in chocolate.
Roll the nut paste into bite sized balls, the batch will make around 22 balls.
Insert a toothpick in the nut paste ball and dip into the chocolate, use a spoon to pour over to ensure it is fully covered. Use a second toothpick and gently push the nut ball off the first onto baking paper. Sprinkle each chocolate covered treat with flake salt.
Store in a airtight container.
